Can you stop a Pokémon from evolving?
There are two main ways you can prevent a Pokémon from evolving in Pokémon Sword and Shield. The first is to press B as the Pokémon is evolving. When a Pokémon has reached level 100, it cannot gain any more experience or level up. Due to this, previous to Generation VIII, level 100 Pokémon cannot evolve in any way which requires leveling up. From Generation VIII onwards, using a Rare Candy on a level 100 Pokémon is able to trigger these types of evolutions.

The only reason you would want to stop your Pokémon from evolving is if it learns a move that its evolution doesn’t learn (for example, Growlithe learns Flare Blitz but Arcanine doesn’t, so you may not want to use a Fire Stone on it right when you acquire one).

This is not to say that you should never evolve your Pokémon, as the majority of final evolutions are still worth the hassle. There are some Pokémon who gain incredible new abilities and stat boosts from evolution, to the point where you would be foolish to keep them in their earlier forms.
