Do Pokémon change when they evolve?
The short answer is, yes, your Pokemon will likely get new moves whenever you evolve them, but keep in mind that some moves may be locked out until you reach the final evolution stage. Also, it’s best not to think too much about powering up their CP until you’ve evolved them completely.

When a Pokémon evolves, it becomes a new species of Pokémon. This new species has a different Pokédex number and base stats, and may be a different type, learn different moves, and have a different Ability. The Pokémon’s personal properties, however, such as Nature and Shininess, remain.

After Goh found a way for it to use a Fire-type move, Cinderace was happy that it used a Fire-type move by channeling its heat through its feet and into a rock, which could be used as a projectile. This caused it to evolve into Raboot, and their relationship changed.

Is there a benefit to not evolving Pokémon?

Is Goh replacing Ash?
Goh cannot replace Ash, who has been the series’s protagonist for more than 20 years. Goh is more likely to be a companion-type character in future seasons like Brock, or Tracey. However, the franchise can make him the main focus only in the Pokemon Journeys saga but he won’t appear later in future seasons.
